Spinach Apple Salad
Main Ingredients
⦁ 5 oz. or just over a half cup of fresh baby spinach
⦁ 1/4 c. red onion finely chopped
⦁ 1 apple, such as red apple (Honeycrisp) thinly sliced
⦁ 1/3 c. crumbled feta cheese
⦁ 1/4 c. almonds toasted and chopped
Dressing
⦁ 3tbsp. red wine vinegar/ can skip it
⦁ 1/3c. olive oil
⦁ 2tsp. Dijon mustard
⦁ Kosher salt
⦁ 1/2 shallot, minced or 1 clove garlic
⦁ Grounded black peppers
Instructions
Mix well all the dressing ingredients and season with salt and pepper.
In a bowl put all salad ingredients. Add dressing, mix everything together. And Voila!
Note: You can skip wine if you like.
Green Detox Smoothie
Ingredients
⦁ 2 cups of fresh baby spinach
⦁ 1/2 cucumber chopped
⦁ 1/4 cup parsley
⦁ 1 inch ginger
⦁ 1 ripe banana
⦁ 2 dates
⦁ 1/2 lemon juiced
⦁ 1/2 cup unsweetened almond milk
⦁ 1 cup water
⦁ 3 ice cubes (if you like chilled)
Instructions:
In a blender add in your liquid ingredients and then add in the rest of the ingredients. Blend everything together until smooth. You can have it in the morning for breakfast.
